Ave Mario is 700 m2 of pure paradise, managed by our funky squadra of 120 Italians. Inspired by an idyllic day in Florence, a « Church » version 2.0, the 295 seats are spread over 3 spaces, and 2 gigantic terraces. Our youngest Head Chef Andrea heads up the kitchen with a brand-spanking-new menu serving up our first ‘biga’ pizzas, giant carbonara ravioli and La Gran Scaloppina alla Milanese made with high-welfare rose veal. Not forgetting dolci, where a feat of gelato engineering has created our 60cm tall Gelato Tower.

The main bar consisted of Rosso Levantos, a marble quarried in a particular area of Levanto, concentrated on the coast of La Spezia. It is increasingly rare and precious. It is very similar to the more easily quarried Rosso Lepanto from Turkey.
The basement kitchen counter is made from Volakas marble. A famous white Greek marble which vein shades can vary from grey to light brown, used for indoor applications.
The floors consist of black and white, striped, terrazzo and the pattern continues all the way up the walls and around the ceilings.
